- 25 Blue Point Oysters, raw and unshucked
- Horseradish, for serving
- Tabasco, for serving
- Lemon wedges, for serving
- Heat your water bath to 185°F.
- Line vacuum bag with aluminum foil, so the oyster shell does not pierce the pouch.
- Vacuum seal.
- Cook for 5 minutes.
- Remove oysters from the pouch and serve with horseradish, tabasco, and lemon wedges.
