Richly Intense Brown Butter Scallops

Turn ordinary scallops into a rich treat when you top them with a toasted brown butter for one amazingly intense dish!

  • 1 package scallops
  • 2 teaspoons brown butter, divided


  1. Preheat your sous vide bath to 140°F.
  2. Pat your scallops dry with a paper towel.
  3. Place scallops and 1 teaspoon brown butter in a vacuum bag.
  4. Vacuum seal airtight.
  5. Place the bag in the water and ensure that it stays submerged.
  6. Cook for 40 minutes.
  7. Heat remaining brown butter in a pan over high heat.
  8. Add scallops to the pan and sear for 30 seconds per side until golden.
